Pancakes and a Nap

In the winter months, we love some Sunday breakfast. It’s something we started two years ago and never stopped. We would go to church on Sundays, then come home and figure out what to have for lunch. It was usually grilled cheese and tomato soup, tacos, pizza, or something on the grill during the summer months. One chilly fall day, I decided to do pancakes, eggs, and bacon as a late brunch. We all enjoyed it so much, and Tyler asked if we could do it again the following Sunday. We never quit.

Now, it’s not pancakes and bacon every Sunday. I do switch it up. So, one Sunday, it will be French toast and sausage, and the next week might be homemade breakfast sandwiches with home fries. Baked oatmeal, omelets, and breakfast casserole are other favorites too. There is nothing like going to church when it’s cold out, coming home to a big hearty breakfast, then taking a nap or lounging on the couch! Not good for the waistline, but hey, we all need one day to rest our bodies and enjoy a good meal.

In the summer, we spend a lot of time at the river, so we love to pack lunch and head out on the boat for the day. We didn’t make big breakfasts much over the summer because Sundays, we weren’t home much, and of course, napping and being lazy on the couch doesn’t often happen because there is always something to do during those months. But for Father’s Day, the kids and I surprised Chris with a Blackstone griddle, and we were at the river that weekend. Needless to say, it didn’t come home. Each Sunday, we whipped up breakfast faster than we ever did at home! Pancakes, eggs, bacon, done in a flash. We were hooked.

“Mom, can we do breakfast every Sunday morning at the river now?” Ty asked. (He is my breakfast kid!)

That griddle didn’t come home and stayed in the back of our Yukon until October with all our river supplies. We were in love! This sure changed summer Sundays for us and was such a treat to have to serve many people throughout the weekends.

Breakfast used to be my least favorite meal of the day, but now it’s my favorite. Six days out of seven, I eat healthy breakfasts. I love my protein shakes, eggs, oatmeal with protein powder, Greek yogurt with granola and berries, multigrain English muffin with a smidge of peanut butter, or on occasion, turkey bacon or sausage. Man, would I get a hankering for pancakes, though, when I had some turkey bacon! I found a healthy pancake recipe, and dang, it was good! My family even loved them.

Being it’s January, and many of you are probably on the bandwagon of health and fitness coming into 2022, I thought this was a perfect recipe to share. They freeze very well, and you don’t need to feel bad about these babies at all. They pair well with turkey bacon and a nap.

Healthy Pancakes
Ingredients:
• 1/2 cup milk (your choice)
• 1 banana
• 1 1/2 cups of rolled oats (I used Quaker Quick Oats)
• 2 eggs
• 1 tsp vanilla
• 2 tsp baking powder
• Some honey or other sweetener
Directions:

Mix in a blender or really well by hand. Cook on medium heat. Flip after 2 minutes — cook 1 more minute on the other side.
