What a Year

As far as I’m concerned, I could go to sleep and wake up to the new year. 2021 never sounded so good.

Now, the thought of skipping right through my favorite “-BER” months would make me sad. I live for these months and cooler weather, but I pray to God that the holidays will feel the same. (Other than the shopping, since so many places are closing!?)

Easter was different, summer wasn’t the same, the first day of school was strange not being able to walk my kids to their class, and now trying to even take away the privilege of remembering those who lost their lives on September 11th, nineteen years ago. I’m not even going to get into the 9-11 ride that the Coalition has done since I can remember. It’s not their fault we can’t ride. I just want to ride to remember the fallen. I don’t want to protest. I just want to remember. A small group of us are gonna do the route that night and keep to ourselves. Carrying that memorial card on me while doing that route is how I know to salute the fallen. It’s been tradition for years. I know we don’t need motorcycles to remember them, but until you’ve done the ride or been on the sidelines, you don’t know that feeling. That feeling of a community coming together. The one night where it feels like peace on earth. Where we all get along and wave the American flag and throw up peace signs with our fingers. I feel like we need this more than ever now! But like I said, I am not even gonna go there. Instead, I am going to make the best out of the situation. Just like I did with Easter.

I made it an Easter we will never forget.

Summer? Well summer we didn’t do a vacation, parks or even go to Knoebels, but we still made it a fun summer for our kids. They never complained once and said how much fun they had this summer. Making new summer traditions and the best out of our time together.

First day of school? Wasn’t much I could do there, but their dad still took off work to see them off to the school bus with me. They still got new clothes, shoes, lunchboxes and picked out their first day of school special dinner momma makes them where they tell us all about their first day! When they came home with smiles that first day, it made me so happy. They made the best out of a new situation.

As for 9-11, they can’t take that away either. A day as Americans we will never forget. We will still ride to remember, and I’ll throw up that peace sign whether folks are on the sidelines or not.

This may be a year we will never forget too. I have a feeling a lot of people feel the same way I do, and will be there with their flags, supporting the remembrance of 9-11. Be ready for thunder in the Susquehanna Valley, because it’s coming — Let’s Roll!

Raisin Filled Cake
Filling:
• 1lb raisins
• 1/2 cup sugar
• 2 cups water
• 2 Tbsp flour

Cook until thick on stove top, and then add ½ cup of any nuts. Let cool.

Crumbs:
• 4 cups flour
• 1 Tsp. baking soda
• 1 cup shortening
• 1 cup brown sugar
• 1/4 tsp. salt
• 2 eggs- beaten
• 1 tsp vanilla

Mix together the flour, brown sugar, soda, and salt. Then cut in shortening. Add eggs and vanilla to make moist crumbs. Pat a little more than half of the mixture in greased and floured 13 by 9 pan. Spread filling over this and sprinkle the rest of crumbs. Bake at 350’ for 30-40 minutes until golden brown.
