Ahhhhh September. Beautiful September. The crisp air it brings and the change of nature that is about to start is exciting. The “BER” months are my favorite, guys. Seriously. I was made for September, October, November and December.

Does anyone else feel like if they blink, before we know it Christmas is here!? It’s crazy! Kids are back to school and I noticed even late in August as I write this, the leaves are already starting to change out here in the countryside. This morning, as I was making my husband’s breakfast, and served him pancakes with a piece of toast, I said to him, “Well babe, I’ve made it! You can feel the chill in the air this morning, fall is just around the corner. I made it through the humidity like a boss this year!” Then we did a high knuckle punch. BOOM BABY! Peace out summer! I won’t miss the crazy heat you bring and the sweat you give my upper lip.

Now, I am sure you are thinking “Dangggg, she be makin’ her man pancakes at 6 a.m.” Listen, these pancakes in particular weren’t homemade. They were made by Eggo. *Insert that cheesy smile here* I mean, even I like a frozen pancake every now and then. My daughter Kenzy lives on pancakes. She loves going to the freezer aisle and picking a box out when she can. Momma buys her the double pack of Aunt Jemima pancake syrup from Sam’s because this girl lives off pancakes.

At night, her favorite book is Little Ree by Ree Drummond. It’s about a little girl who grew up in the big city, but moved to the countryside on a farm to live with her grandparents. The end of the book has Edna Mae’s pancakes in there, which she talks about in her book.

If I make a big breakfast with the whole fam, I make these pancakes, and then freeze some, but they don’t last very long. Chris doesn’t even care what I serve him for breakfast anyways, he just loves me being up with him and making breakfast even if it’s cereal and toast.

Hey, that toast though, that was homemade bread with his pancakes. The kind that makes killer toast. I got ya there, didn’t I? You probably thought the toast was just from some silly old store-bought loaf. Nope. Nopers. Frozen pancakes and homemade bread for toast is the breakfast of champions! Hahaha.

I have to be honest though, this week I wasn’t 100% sure what I was going to write about. I just knew I would open with the start of September, then when I start to type it just goes straight to my fingers on my keyboard. Who knew it would be me opening up and letting out my big secret that I’m only human, and use boxed pancakes too? Yes, I use easy ways to start my mornings sometimes, and even a few boxed items for dinner in my pantry if I need them. There is no harm in a little easy way out some days. We are all human and can’t be making every darn meal from scratch.

Sometimes even boxed pancakes have to take their turn to shine.

Edna Mae’s Sour Cream Pancakes
By The Pioneer Woman

Ingredients:
• 1 c. Sour Cream
• 7 tbsp. All-purpose Flour
• 2 tbsp. Sugar
• 1 tsp. Baking Soda
• 1/2 tsp. Salt
• 2 whole Large Eggs
• 1/2 tsp. Vanilla Extract
• Butter, For Frying And Serving
• Warm Syrup, For Serving

Directions:

In a small bowl, whisk together eggs and vanilla. Set aside.

In a separate small bowl, stir together flour, sugar, baking soda, and salt.

In a medium bowl, stir together the sour cream with the dry ingredients until just barely combined (don’t overmix.) Whisk in the egg mixture until just combined.

Heat a griddle over medium-low heat and melt some butter in the pan. Drop batter by 1/4 cup servings onto the griddle. Cook on the first side until bubbles start to form on the surface and edges are starting to brown. Flip to the other side and cook for another minute. (Pancakes will be a little on the soft side.)

Serve with softened butter and syrup.
