Comfort in a Crockpot

I have to say, I haven’t minded this summer heat all too much yet — which is a shocker for me. I hate the heat and welcome cooler weather anytime. I can’t believe it’s August, and it hasn’t been too terribly brutal. I am talking about unbearable humidity that lasts daysssss. Ya know, that kind of heat that sticks to ya.

I have seen stores getting their fall stuff out, and it always gets me excited because, typically, I am just over summer. Plus, fall is my favorite season, so I am always ready for the autumn colors and everything pumpkin. But, I won’t get into all that now. I am sure so many of you are like, “Andrea, stop! We still have summer left!” I know. I know. Let’s enjoy the last little bit of the river days and swimming in pools.

What about the comfort of a good fall meal though in the middle of summer? Would you like that? I was just craving a good comfort meal last week. Like a Thanksgiving dinner, but not all the time in prep. It was a hot day; I didn’t need the oven and stove going all day. I wanted the mashed taters and filling. I got my handy ol’ crockpot out, and instead of turkey got out some chicken. Love me some chicken. I thought, why not a full dinner in a crockpot? I’ll throw everything in and let the crockpot do all the work. I cooked it on low for six hours, and by the time mid-afternoon rolled around, our home smelled just like Thanksgiving. The filling was looking glorious! I had to taste test it. It was so darn good. I patiently waited for 6 p.m. to roll around so we could eat.

I even made gravy, mashed taters, and dinner rolls. As we sat around our table, I was watching our deer out back feeding. I felt like the brightly colored leaves should be falling around them, and the air crisp. Instead, opening up our sliding glass door was like a wave of heat hitting you square in the face. Sorry, Andrea, it may taste like fall, but girl, it still be summer out there!

Hey, tease those taste buds into thinking it’s fall. Make some of that cozy comfort food and keep your house cool. No judgment if you decide to throw a pumpkin pie in the mix. Dang it! Now, why didn’t I think of that?

Crockpot Chicken and Stuffing

• 4 boneless skinless chicken breasts
• 1 tsp. oregano
• Salt/Pepper
• Chicken seasoning
• 10.5 oz cream of chicken
• 1 – 1/4 cup sour cream
• 1 box of Stove Top
• 2 cups cubed Italian Bread
• 1 stick melted butter
• 1/2 cup chopped celery
• 1/2 cup chopped onions
• 2 cups frozen green beans (add at the end)

Season chicken with oregano, chicken seasoning, salt and pepper. Lay in a GREASED crock pot. In a large bowl combine all other ingredients and mix well. Lay next to chicken. Place on low for 6 hours. At the 4 hour mark, add green beans. Don’t add before or they will be mush.
