Cheese. A Band Aid for Food?

You are either a pepper person, or not a pepper person. I wasn’t a pepper person for the longest time. I grew up not eating them because my momma isn’t a pepper person. When I smelled them cooking with onions, they smelled so good so I tried it when I got older. I instantly fell in love and now they are always on my grocery list. When I went over to Nippenose to get flowers, the Amish had beautiful home-grown peppers. Red and green. I’m going to use them for kabobs next week. Mmm. Mm. Love me some good kabobs! Fresh veggies this time of year is just fantastic. You all should know by now I am a fair-weather girl. Never look forward to the scorching heat, but I do love me some farmers markets and local farms to pick berries and buy amazing produce over the summer. I have so much to can this year, and oil pepper rings are one of the first to do on my list. One of my hubby’s favorites. Chris never liked peppers either, then one day he decided “Dang, these cooked peppers are good!” The love then began. I am telling you, if you didn’t like them, try them at least cooked. They are amazing!! I know that’s easier said than done though. I hate tomatoes but love tomato sauce and ketchup. Go figure. Still bite into one each year hoping I’ll like a fresh mater, then end up spitting it out. I just need to accept the fact I’m never gonna like a tomato. Just like I am never gonna like tuna fish or anything that swims in the sea besides shrimp. You can’t make yourself like something, but you could doctor it up to make yourself ease into it. Like how my mom put a slab of cheese over her fish sandwiches. My brother didn’t like them, I didn’t like them, and dad, well he didn’t like them either. But, when you are the cook, you make what you make, right? There she was, with that yellow cheese on top of that fish sandwich saying how tasty it was with that cheese on there. I’d doused that baby with mayo and praise Jesus that cheese was there. No clue how I’d hack that down without it. Haha! (Momma rarely made things we didn’t like though, and she loves fish sandwiches.)

So maybe you are a “top that pepper with cheese and mayo” kind person, but even if you don’t like peppers, this recipe is so good! Don’t eat the pepper, just eat the amazing filling.
Either way, this recipe is a wonderful crockpot recipe with a pizza spin off. SEE! Cheese on a pepper!? Makes everything better. It’s like a Band-Aid for foods we hate. Thanks cheese.

Stuffed Pizza Turkey Peppers
Pizza stuffed into a pepper that you don’t have to feel guilty about!
Ingredients:
• 4-5 Bell peppers (Colors are up to you!)
• 1/2 cup diced onion
• 1 tsp minced garlic
• 1 1/2 ground turkey
• 3 cups tomato sauce
• 2 cups brown rice
• 1 tsp Italian seasoning
• 1/4 tsp Salt
• 1 cup mozzarella cheese (save 1/4 cup for topping)
• 3/4 cup chopped pepperoni (save a few pieces for topping)
Directions:

Spray the crockpot with a nonstick cooking spray and place a 1/4 inch of water on the bottom.

Start cooking meat. Add the turkey, garlic and onion to a pot over medium heat and cook through. Once meat is cooked, add the tomato sauce. Let simmer for 20-30 minutes. The longer it simmers the better it tastes!

While your meat is simmering, cook your brown rice according to the box.

After simmering, add rice, pepperoni, seasonings, and 3/4 cup mozz cheese to the meat mixture. Stir well. Scoop mixture into each pepper and place into a crockpot. Cook on low for 6 hours. Top with cheese, a few pepperoni pieces, dash of Italian seasoning and melt for a few minutes, then dig in!

I found serving it in a deep small bowl was easiest to eat.

*Note, if your peppers don’t take up your full crockpot, add a ball jar with water on the bottom to help your peppers not to fall over. *
