Pandemic

Well that escalated quickly! I hate to be one of those people since everywhere we go it’s talk about the coronavirus. People are scared, worried and concerned. I get it. When you go to the store and all the eggs, pasta, toilet paper, and meat are gone from the shelves of all the local grocery stores, it’s worrisome. That’s a minimum of what is missing nowadays. Will we go next week, and they still not have the groceries we rely on each week? As a community we have to stick together and help neighbors, friends and family. Plus, God’s got this. I know everything seems like we are living in another life right now, but trust me, there is always a reason for everything he does. Look how we are all pulling together! All these amazing local businesses giving lunches to kids who need it because school is out. I swear it wasn’t an hour after the news was out that all schools were shut down and social media was blowing up with businesses in our area for kids to come get free lunches. It’s incredible! THANK YOU to all the businesses who are willing to lend a helping hand! Remember these small local businesses during this time that can’t have us dining in. Take out will help them a lot! These are places we count on when life is going good; we can’t let them down now. Just be smart doing it, and don’t forget to tip if you can!

Kids are off school and us as parents are trying to keep them busy. We took our kids to the store before the whole shutdown happened just so they could see the shelves and what’s going on out in the world. I squirted hand sanitizer on all our hands before going in, and after we left, but this is history folks. Now we are officially homebound. While they are home, have them read each day. How about writing little notes or coloring pictures to folks in nursing homes who can’t get company right now? Make cookies! You would be teaching them how to bake. Baking is teaching them how to measure. Count out the eggs. Roll them into shapes if you want. You are teaching them patience while they bake, and the bonus is they will get a delicious snack! Leave some on porches for neighbors and friends. Maybe add a kind note saying, “We will all get through this!” Or, “We are in this together.”

Even if you don’t have kiddos, bake those cookies anyways and deliver some to folks that may be isolated and fearful. It can make someone’s day. Plus, these cookies are so simple that you can spread some love all over!

Just a few tips quick before I close. I bought some organic milk and put it in our extra refrigerator so we have it in case there is a week we can’t find milk. Good till the end of April! Organic lasts longer than regular milk. Or, if you have freezer room, you can freeze regular milk, but you have to take some out first because milk needs to expand when frozen. It will keep up to three months in the freezer. And, if stores don’t have regular raw chicken in the meat department, get a cooked rotisserie chicken if you can at Wegmans, Weis or Sam’s Club! You can freeze them also. Be safe out there folks! We are going to get through this together. We are STRONG!

Spring Cake Cookies
• 2 eggs
• 1/2 cup oil
• 1 box Spring Cake Mix by Pillsbury
• Funfetti Spring Icing by Pillsbury (Y’all, don’t judge me for this icing. Sometimes I just want to feel like a kid and eat canned icing.)

Mix well, drop into balls on a baking sheet and bake for 350’ for 8-10 minutes.

Let cool, icing and top with sprinkles.
