Turkey and Everything Pumpkin

When you think of Thanksgiving next week, what do you look forward to more? The turkey? Mashed potatoes? The stuffing? My hands are going up in the air right now. Stuffing is definitely my favorite. Cranberry sauce? Green bean casserole? Baked corn? There are so many wonderful dishes that come along with Thanksgiving. I am sure as I was naming stuff from our traditional Thanksgiving, you may have a few dishes that come to mind that must be on your table too.

Let’s not forget dessert. I try to pace myself at lunch when we are eating because I know that I still need to fit desserts. The nice thing about Thanksgiving dessert is I get to have it twice. After lunch, and again at dinner.

I’ve never been a big pumpkin pie person, and I am not a fruit pie person at all. Give me cream pies all day long! We typically have chocolate cream pie, ice cream pumpkin pie, regular pumpkin pie, and a pumpkin roll at our Thanksgiving. These are perfect because we have a smaller crowd at our Thanksgiving. Let me tell you though, I recently became a pumpkin pie lover. My stepmom Chrissie Perry made her pumpkin pie, and it was so good! Creamy smooth pumpkin pie dolloped with a smidge of Cool Whip. She had been holding out on us! So now not only do I have to save room for chocolate cream pie, ice cream pumpkin pie, and pumpkin roll but now there is regular pumpkin pie to look forward to on Thanksgiving day. For lunch, I have a sliver of everything pumpkin. I mean, I feel like after turkey and stuffing, anything pumpkin needs to follow.

I love supper just as much as I enjoy lunch. We get fresh rolls and make sandwiches with the leftover meats from lunch. Turkey and ham with crunchy lettuce on a fresh roll is a Thanksgiving tradition. Then, I side it with a slice of chocolate cream pie. It’s the perfect combo.

Even leftovers after Thanksgiving are a treat. Who doesn’t love Thanksgiving leftovers? It’s a staple that comes along with Thanksgiving.

Thanksgiving isn’t just about the turkey or pumpkin pie, though. It’s about being thankful for everything in your life. It’s about spending the day with family. It’s about being grateful for not just the big things in your life but all the little things. Not just to be thankful for your favorite pie or football game on TV. What are you thankful for?

Next week, I will share what I am thankful for and what Thanksgiving means to me. Thanksgiving is one of my favorite holidays, and I can’t wait to spend this day with my amazing family. Let the countdown begin!!

Pumpkin Roll

Ingredients:
– 3 eggs
– 1 cup sugar
– 2/3 cup canned pumpkin
– 1 tsp. Cinnamon
– 3/4 cup flour
– 1 tsp. baking powder

Directions:

Cream all ingredients listed together with a mixer. Spread on a cookie sheet lined with wax paper and greased.

Bake at 375 for 15 minutes.

Let cool 10 minutes, then turn onto tea towel sprinkled with powdered sugar. Roll it up and let sit.

When cooled, unroll, and spread with filling.

Filling:
– 1 (8 oz) cream cheese
– 1 1/4 cup powdered sugar
– 1 tsp. vanilla

After spreading with filling, roll up jelly roll style.

* I love to decorate the top and make EXTRA icing to do so. Place in a plastic bag, cut the corner off and drizzle over top pumpkin roll. Dust with powdered sugar with a small wire strainer, then sprinkle over fall sprinkles. Makes a beautiful display for your holiday table.
