I think one of the best parts of summer is all the fresh produce and everything we can do with it. The choices and possibilities are endless.
What is your favorite thing you look forward to?
That first bite of sweet corn with butter and salt?
Stuffed peppers straight from the garden? My peppers are booming in my garden this year! I love that I don’t have to buy them right now. It’s awesome and so darn handy!
How about a homemade salad with fresh-cut lettuce or a creamy cucumber salad?
Or are you more of a fruit person? How about blueberry buckle cake (my favorite), strawberry shortcake, peach cobbler, or cherry pie? You can’t beat fresh fruit by itself, but then you add flour, sugar, and egg, and it’s delectable!
Out of all the summer fruit, nectarines are my favorite. Then a big ol’, cold peach, that when you bite into it, the juice runs clear down your arm. Ohhh yeah. You know exactly what I mean if you are a peach person.
Of course, I love all the berries and eat them all year round. Amazing fiber and so easy to have on hand.
But have you ever heard of a plumcot? It’s a mixture of a plum and an apricot. I know Wegmans sells them, and every year I am like a little schoolgirl waiting for their arrival. I didn’t even know I liked apricots. Give them a try! They are so good.
You can’t get stuff like this in the winter! Unless you preserve them, of course, but a fresh peach is still better in my opinion. I’m not a huge fruit dessert person unless it ends in cake. Like strawberry shortcake or blueberry buckle cake. But this peach cobbler with the crumbly top is pretty delicious this time of year. Give it a try, or add your favorite fruit to make it your own.

Peach Cobbler
Ingredients:
Filling:
• 2-3 peaches
• 1 Tbsp of Stevia (or your favorite sweetener)
Topping:
• 1 cup almond flour
• 1/4 cup butter (softened)
• 4 Tbsp. Stevia (or your favorite sweetener)
• 1/2 tsp. vanilla extract
• 1/2 tsp. baking powder
• 1/2 tsp baking soda
Directions:
Preheat the oven to 300°.
Slice the peaches.
Place them over a baking tray or cast iron skillet and sprinkle with Stevia.
In a bowl, mix butter, vanilla, Stevia, baking powder, baking soda, and almond flour.
Cover the peaches with the batter irregularly.
Bake for 25 minutes or until golden brown. Serve with ice cream or Cool Whip.
