Life is Short, Eat Cookies

One of my fondest memories as a child was my momma’s homemade cookies. Coming home from school and having them for a snack was such a treat. She always had some delicious homemade treat made for us most weeks. Even the neighbor girls knew Susie usually had delicious baked treats inside our sweet little home on Roosevelt Ave.

Even now, at thirty-six years old, I still love them. My momma loves to bake. She could just spend an afternoon baking batches of cookies. Me, I’d rather be spending the afternoon making a nice dinner than baking. I can bake but choose not to if I don’t have to. I love to cook; she loves to bake.

I went to her house the other day, and she had a plastic container on her counter full of cookies. I asked her what kind, and they were chocolate chip. I had to have one. Just one — but I enjoyed every bite. Her oatmeal chocolate chip makes me weak in the knees, and honestly, I don’t think I could have controlled myself and stopped at one. Plus, I tell myself there’s oatmeal in them, so how bad can they be!? They are seriously heaven. Delicious! (I’ll share the recipe with you all soon. The secret to the recipe is pudding!)

I love sweets. This morning I made two pans of Rice Krispie Treats — one for us and one for the guys at my husband’s work at the WMWA. They are quick and easy and go pretty fast in this family. I often make homemade puddings, sticky buns, and cake cookies along with the Rice Krispie Treats. So, I do make sweet treats, just not as often as my momma.

But cake cookies!? Oh, my my. You can make so many different flavors with one box of cake mix and add treats to them. Plus, they don’t take long at all to make. That’s the beauty of cake cookies.

Do you love cookies but simply don’t have much time for baking? Cake cookies are so easy, and you can make so many different kinds. That’s the best part. All it takes is three ingredients! A box of cake mix, two eggs, and 1/2 cup vegetable oil. And guess what? You don’t even have to bust out your mixer.

Let me give you some ideas; check this out.

Cake Cookie Combos:
– Funfetti Cake + Sprinkles (MY FAV!)
– White Cake + Chocolate Chips
– Chocolate Cake + Reese’s Peanut Butter Chips
– Red Velvet + White Chips
– Lemon Cake + Chopped Pecans
– Strawberry Cake + Chopped Drained Cherries
– Chocolate Cake + Mini Reese’s Bites
– Spice Cake + Butterscotch Chips
– White Cake Mix + Fruity Pebbles
– Carrot Cake + Mini Marshmallows

Mix and match any way you like. The possibilities are endless! Perfect for the holidays, family dinners, and just to snack on. They freeze wonderfully too.

Just pick your combo, mix, and bake for 9-10 minutes at 350°.

I even add icing once in a while too!

Like the spring cake cookies, buy the box of Pillsbury spring cookie mix with the icing. Yellow icing and fun springy sprinkles. You have adorable, delicious cookies that look adorable for spring.
