I really have come a long way on this topic. From a girl who hated breakfast and never took the time to eat in the morning to now rolling out of bed and ready for breakfast.
Well, let me back up a bit. At night when I go to bed, I think about what I want in the morning. It kind of helps to go to sleep when you know what deliciousness you are waking up to. *Insert my famous cheesy smile here* (I’m a foodie. Don’t judge.) I decide if it’s going to be a Greek yogurt with fruit and granola kind of morning, a protein shake, or whole-grain English muffin with a little peanut butter with my homemade jelly, sometimes paired with an egg. These are my three go-tos anymore. Simple, quick, and healthy for me besides that jelly, but hey, I’m talking like not even a teaspoon of jelly. That’s not going to hurt all my hard work and progress on my weight loss. I can’t resist that smidge of jelly with smooth, creamy peanut butter on a crunchy English Muffin. OK, be right back. I have to go make myself an English Muffin now.
Dang, was that good. Yes, I legit just went and made myself half an English muffin with peanut butter and just tried one of my new jellies. Strawberry-Ras is amazing on an English muffin. Oh, my goodness! We just opened one last night at dinner, but it’s a whole new level putting it on toasted bread. Yes, it is in the morning too. It’s not 3 p.m. or anything, and I am craving toast.
I woke up to a thunderstorm this morning. It was 7:40 a.m., and of course, my kids were still asleep. I made my way downstairs to hear the rain coming down against the windows. After brushing my teeth, I walked over to our dining room sliding door and opened it up to the screen to hear the rain. I then grabbed my laptop and cozied up on the couch with my Christmas blanket to start writing my Webb column. I figured I’d wait till my kids got up to get breakfast.
As I am writing, about 8 o’clock on the dot, in comes our deer. Now with a wee little one that I just get a kick out of watching with its momma. It was so relaxing. It’s the simple things that make me happy. Like breakfast, breakfast makes me happy.
You know what really makes me happy, though!? When I can have French toast and sausage. Add a little bacon and fruit in there, and I’ll go to sleep with anticipation for that next morning! There is nothing like a big breakfast.
I love supper. When we sit around the table to a delicious meal after a long day and are together at last. But there is just something about gathering around the table for a big home-cooked breakfast in the morning. You know what’s even better? Is when it’s ready to pop in the oven when you wake up, or someone else cooks you breakfast. We had our first Sunday morning home in months last Sunday. Typically, we are at the river or seem to have picnics to go to. During the fall and winter months, every Sunday, we have a big breakfast. It’s kind of our thing now after church. When COVID started, we had to watch church from our computer, so we started the big breakfast thing while we watched, and just never stopped. So, when we had a rainy Sunday in July, we were excited to have our big breakfast at home. I made sausage, fruit salad, and this fantastic, and I mean AMAZING French toast casserole! My family went nuts over it. I was happy, they were happy, and this is one recipe I would surely fall asleep with a smile, just anticipating that French toast in the morning. Is it OK to make this again if we just had it last week? MMM. Mmmmm. Mm.
Cinnamon Streusel French Toast
Ingredients:
• 1 loaf of French Bread
• 9 eggs
• 2 1/2 cups of milk
• 3/4 cup sugar
• 1 Tbsp vanilla
TOPPING:
• 1/2 cup flour
• 1/2 cup brown sugar
• 1 tsp. cinnamon
• 1/4 tsp salt
• 1/2 cup cold butter, cold cut into pieces
Directions:
Cut loaf into cubes and place evenly in a greased 9×13 pan.
In a bowl, mix together eggs, milk, sugar and vanilla. Pour evenly over bread.
Mix together flour, brown sugar, cinnamon, and salt in a medium bowl. Cut in butter with this mixture until crumbly.
Sprinkle crumbly mixture evenly over the bread.
Bake at 350° for 45 minutes to 1 hour depending on how soft you like it.
