As a mom of two kids and a wife, it’s nice to have easy quick nights on these summer days. I mean I love to be in my kitchen, but you know what I also love? Being outside. On these beautiful 70-degree days that we have been getting, I have been having a hard time coming inside! I’ve had quite a bit of people say to me the past few weeks about how tan I am. As soon as school was done with my kids we would head right outside after being on computers for hours in he mornings. I always find something to get into. Even if it’s just swinging on our wooden swing outback watching my kids ride, but typically I don’t sit much. I look for something to do and get my tan on! We live out in the countryside with a little land in the holler, so there is always something to do out here. It never ends this time of year does it? Weeds need pulled, grass needs mowed, sticks need picked up from the wind or storms, patio needs swept, windows need washed, and there is always something to power wash or a vehicle that needs a good washin’. It is NEVER ENDING. But when I’m outside, and it’s not hotter than a hot pocket microwaved for 6 minutes, I’m happy. And knowing dinner is ready, just sittin’ inside my fridge waiting to be popped in the oven!? Well, that makes me happier than a birdie with a french fry!
Quiche is a tasty easy dinner to have ready on days like these. I make bagels with it and a side salad or fresh fruit, makes for a delicious dinner. Cinnamon raisin bagels are the best, you get that salty and sweet together. Mmmm. Mmm. Makes a heck of a pair! If you don’t like ham, you can use bacon or sausage too. They are all pretty great. You’ll thank me when you have extra time to pull those weeds. *Insert cheesy smile here* You know I love my cheesy smiles and a good delicious ready made meal.
Ham and Cheese Quiche
• 1 pie crust softened as directed on the box
• 1 cup milk
• 4 eggs slightly beaten
• 1/4 tsp salt
• 1/4 tsp pepper
• 1/2 lb. chipped baked ham
• 1/2 cup Extra Sharp Cheese shredded
• 1/2 cup Mozzarella Cheese
Preheat the oven to 350 degrees F. Using a shallow sided 9″ inch glass pie plate place the softened pie crust inside and crimp the edges.Add the chipped ham and cheeses to the bottom of the pie crust.
In a medium bowl mix the milk, eggs, salt and pepper, then pour over the bacon and cheese.
Bake for 45-50 minutes or until a knife, inserted in the center, comes out clean. Let set for 5-10 minutes before cutting. Has to sit in order to cut.
