Remember last week I talked about how special birthday dinners are, and how my husband picked out Chicken Carbonara for his birthday dinner for me to make? Well, that night I invited my in-laws over to join us. It was such a nice evening. We just sat around the table talking till it was coffee and dessert time.
During dinner, my mother-in-law, Marlene McElroy Rook, said how my stepfather-in-law was so excited all day to come over for dinner. It made me feel so good. I loved that! She continued to say how people come up to her and ask her if I am her daughter in law who writes for the Webb, and how much they enjoy it. My father-in-law, Robert Rook, then proceeded to say he is popular at the golf course for the same reason. “We saw your name in the Webb, Bob!” they’d say! My father-in-law patiently waits for the Webb to arrive each week to dig in. It is the dearest thing. I am seriously so blessed to have such wonderful in-laws who support me and are some of my biggest fans.
I can’t tell you all how neat it is to know how many of you read my column. I try to pertain it to food, but sometimes get off course. I take everyday opportunities and put them into my column. I’m so thankful Jim Webb gives us free reign of all our writings, how cool! Many of you enjoy getting to know my family, and what we are up to. I want you to feel like you know me. I am so big on family. Family is the most important thing in my life, and God. They come first. Giving you easy recipes that taste delicious is why Andrea’s Country Home Cookin even came into motion in the first place. I want you to taste amazing food that you didn’t have to spend hours on or go to the store to buy some fancy ingredients. You feel good about having a meal ready for your family, they are happy because it tastes good, and as a family you all connect that day even if only for that 30 minutes of around the table for dinner. No phones. Just you and family.

Grab your ingredients, pick a night, and sit down to a family dinner with this delightful crock pot meal. After all, the most important time is family time!
Crock-Pot Chicken and Dumplings
Ingredients:
• 4 skinless, boneless chicken breast halves, cut in chunks and seasoned
• 2 TBSP butter
• 1 can cream of chicken soup
• 1 small onion, finely diced
• 1 package refrigerated biscuit dough, torn into pieces
* I cut up the chicken into chunks, seasoned with salt, pepper and chicken seasoning. Then placed in the fridge the night before to make sure the chicken has lots of flavor*
Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover. About a half a cup or so.
After 3 hours, I added 2-4 Tbs. of flour to thicken up the broth and a little extra salt for more flavor.
Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Place lid back on and cook until the dough is no longer raw in the center.
Then rub some butter on top of biscuits before serving.
Optional: Any veggies! I put in baby carrots an hour before it was ready.
