Favorite Meal

Have you ever thought about if you had one last meal, what it would be and where you would go? Like, really thought about it?

If I knew I had one good last meal, I know exactly what I would have. I’d go to an awesome bar with incredible food. Those kinds of bars that when you pull up, a bunch of Harleys are lined up outside — that kind of bar. Of course, if it’s nice enough, I’d ride my Harley too. I’d be in my skinny jeans, favorite Harley hoody with my riding boots, and hair in a headband bandana.

I’d order a big ole fat cheesesteak with only lettuce and mayo. I’d want a side of fries or maybe even homemade chips and some wings. The wings would have to be Gold and Tangy, extra crispy. They are my favorite! Then for dessert, I’d have deep-fried Oreos or funnel cake fries. Doesn’t that scream a bar kind of dessert!?

I am such a bar food kind of girl. I love wraps, subs, and sandwiches with a simple side like homemade chips or fries. Obviously, I love some deep-fried treats! Haha.

I do love some Italian food, though. That would be my next pick over bar food — a nice charming little Italian restaurant. You know, the ones that serve homemade warm bread with their amazing oil peppers to dip on the side. Oh, yea. That kind of Italian.

I’m a pasta girl. I love cheesy tortellini covered with a decadent cream sauce, then topped with a moist grilled chicken. A nice bright green crisp salad on the side, minus all the onions, black olives, and ‘maters. I’d go for their house Italian dressing to drizzle over top and maybe, just maybe, add a sweet wine to pair. I’m not a huge drinker, but there is something about Cupcake Moscato D’asanti wine that just goes amazing with an incredible Italian meal.

There I would sit in a long black dress, a cute pair of boots, hair hanging down with my pinky up in the air, holding my wine glass while soft jazz plays in the background. I’d then order my favorite dessert, crème brulée.

These are, hands down, my two favorite kinds of meals. I am such a foodie, and I swear to God my favorite hobby is going out to eat! I love going to a good restaurant, surrounded by family or friends, and just enjoying a really good meal. You can call me up and say, “Hey! Let’s get dressed up all fancy tonight and go to a nice place for dinner!” I’d so be in.

Or, “Hey! Let’s take the bikes and get out of here and ride two hours to a bar that is known for their cheesesteaks and wings.” Yooooo. You don’t gotta ask me twice!

My twelve-year-old son is taking me out to eat tonight at the Olive Garden. He knows how much his momma loves Italian and the OG. He has been all about wanting money for Valentine’s, just so he could take me out for Valentine’s sometime. I told him he didn’t have to do that and that I would pay, but he refused. So, I then told him I would take care of the tip. “No, Mom. I got it. I just want to take you out, just me and you,” he said. My mom tells me all the time that it’s just so sweet how much he loves his momma.

We truly have a wonderful relationship, and he is very open with me. That makes me so happy, and there is nothing like the bond between a mother and son. Tyler has taken me out before, and this kid just has the biggest heart. He will literally try to make extra money just so he can take me to dinner. He is a foodie just like his mother and loves a good Italian meal as well. He said his favorite meal would be a big flat iron steak with waffle fries, Jello, and Mom’s sticky buns! I cracked up at the Jello part.

What would you pick for a last meal? Pizza? Steak? Burger? Pasta dish? Jello? Haha! You know, that one meal that literally makes you happy. When it helps you get through work or a long day by thinking of what you are having for dinner, I hope I’m not the only one who does that, but again, that’s the foodie in me. Mmmm, Mmmm.

There’s nothing like looking forward to a good meal to make a person Hap Hap Happy!

Skillet Pizza Roll Ups

One of my oldies from back in 2020, but oh so good. I can’t even describe these. There are no words.
Ingredients:
• 1 can of Pillsbury Pizza Dough
• Pizza Sauce (I used homemade sauce)
• 2 cups shredded mozzarella
• Pepperoni
Ingredients:

Unroll the dough and place down on a cutting board. Cover with sauce lightly from corner to corner. Then top with cheese the same way. Place pepperoni on last, and any other toppings you would like to add.

Roll up as tight as you can get it, jelly roll style. Cut 1-inch pieces and place in a GREASED skillet. (If you don’t have a skillet, just use a casserole dish.) Bake for 20 minutes at 400 degrees.

Serve with a side of warm pizza sauce for dipping.
