Summer Eatin’

Summer eatin’ is such a special treat. I love fall and winter foods for the coziness of a hot bowl of soup or comfort of a casserole. But summer, oh summer.

As much as I hate the humidity, I look forward to the amazing foods during these months. Like picking strawberries and making some homemade strawberry jelly. Buying that first watermelon, slicing through it, and it’s bright red and juicy! Score! I picked a perfect one. Fresh veggies like string beans or ripe tomatoes to make homemade tomato sauce.

The picnics! Oh, those picnics! When you have a family of amazing cooks, and there is like twenty side dishes to pick from, it gets tough. I mean, a plate is only so big, and so is my stomach, but the choices are endless! Family picnics are the best.

Another one of my favorites, grillin’. I know some of you probably grill all year long. Our grill is out in our garage, and my husband loves to grill, but it’s pretty rare if we do it in the winter. When the weather breaks and you are driving down the road, windows open, enjoying the day just mindin’ your business, then all the sudden BAM! There it is. There is that first smell of the season. Somebody is grillin’. Whether it’s burgers or steaks, you instantly want to grill.

The grill has endless possibilities. We love cooking out and eating on our back patio we just had done this spring. The deer come in to get their feed most nights, the birds are chirping away, and we just have been enjoying these perfect days to sit outside in June.

No humidity, praise JESUS! Some nights I’ve even been writing my Webb column out there.

This week I made hot sausage sandwiches. Peppers and onions to top those babies, it made for one amazing dinner. When the sun went down, there were these flickers out in our woods starting to show. “Ohhhh MOMMA!!! Lightning bugs!!!!!” My 6-year-old daughter couldn’t believe her eyes as it grew darker and all the lightning bugs started coming out. The joy she had out there catching them in her hand was priceless. When I told her that it was time for bed, she was bummed, but I said they will be around for a while. Another summer treat we get to enjoy. There is just something about lightning bugs in the summer. Kenzy sat in her window after we tucked her in just watching the twinkles all over in the yard. Whether you hate or love summer, it is what you make it. There is joy in every season. To see the joy in your kids, just through a lightning bug, makes it that much better. And, those sausage sammiches. *BIG SMILE*

Hot Sausage

Get your favorite hot sausage or mild sausage, then grill them babies on the grill.

Cut up two peppers, one green and red. Fry them with about 1 tablespoon of olive oil. Once they start getting tender, add a half of chopped onion and cook as well. Cook to your liking. Top on sausage sandwich.

NOTE: Another way to do this if you don’t grill, is add sausage in a crockpot instead. Top with one jar of a good brand tomato sauce (240z), then add peppers and onions. Cook on high for about 4 hours.
