OK, so quarantine hasn’t been all that bad. I’ve kept busy, getting projects done we never had time for. Schooling alone keeps me busy. I’m no teacher, nor would I ever want to be, but getting my kids through till June has been my #1 priority. I miss our school morning rituals, but now we have new ones that don’t consist of making sure we are out the door by 8:06am to catch the bus. We were always on time; momma runs a tight ship in the mornings. Make beds, get dressed, eat breakfast, brush teeth, wash face and load that backpack because we leave in a few minutes. New school mornings are nice, kinda just going at our own pace.
Saturdays were always my favorite because my husband was finally home Saturday morning after the work week. Love waking up with him by my side. Ease into the day together. Sunday mornings are always church, which we always go to as a family and are special as well. It has been so weird not going to church this long, but we have made sure since this all started that our Sundays consisted of church. Starting your week off with church family and the Lord is what fueled me for the week. Our new Sunday ritual now is making a big breakfast, and we sit at the table while listening to a message from our little white church on the hill, Buchanan Baptist. I remember the very first Sunday there was no church. I made pancakes, eggs, bacon and had fresh fruit and we were all gonna snuggle on the couch to watch Crossroads. (Our church hadn’t set anything up yet and we love Crossroads, too.) Well our smart tv wouldn’t load the live feed. So much for being smart! My hubby was going crazy not being able to get it to work. I told him the Lord wouldn’t want him all feisty on Sunday morning and we could just use the laptop. (You gotta understand, this man never loses his cool.) So, there we all were, watching it on my laptop and couldn’t hear it very well. Meanwhile, my stud of a hubby still ticked off the darn tv wouldn’t work. Except he didn’t say darn. (Sorry Lord.)
Anyways, 8 weeks later we have it down to science now. Watch it from our dining room table as we eat breakfast there. I’ve made French toast and sausage, omelets, breakfast sandwiches, pancakes and other tasty things. It’s our thing now. Jesus and breakfast.
Bacon and Cheese Omelets
Ingredients:
• 2 eggs, scrambled with a splash of milk and pepper
• 2 slices of cooked bacon, (I cut into 1-inch pieces then fried them)
• 1/4 cup of shredded extra sharp cheese
Directions:
Spray a small pan with cooking spray and pour in eggs, cook on medium heat. When eggs start to bubble, pick up the pan and run the liquid on top around the edge of the pan so that gets cooked too. Once the edges are cooked, flip with a large spatula. Cook the other side a minute or two, then turn off heat. Fill the center with bacon and cheese, fold and serve. Enjoy with a side of fresh fruit.
