OK, so honest show of hands. Who is doing a lot of quarantine snackin’?

Is it because you are bored? Stressed? Sad?

Food makes people happy, and it gives us something to look forward to. Not much to look forward to nowadays, but, if you give yourself something to look forward to, then it can help change your attitude!

I used to look forward to each weekend. There was always something planned. We went out with our friend crew every weekend for dinner. It was a weekend tradition! Church was a weekend tradition. Sunday family night, when we gather in the living room as a family, watch “AFV,” eat nachos and cheese, and start the week out by relaxing Sunday night together, is tradition.

Now, we still do this, and it’s something we all look forward to, especially now because it’s one thing in our life that DIDN’T have to change. I’m thankful for that. It’s the little things like having a surprise picnic outside for your kids or Facetimeing with your friends and family. Parading to their house to say hello from afar. Planning a game night or a special meal. Get creative and plan something that makes you and your family happy.

A lot of people on social media loved the two-week meal ideas, so if I can help in any way, I am giving you another two weeks of meals I planned for my family starting next week. This has been great for us with grocery shopping only every ten days.

I put a game night in there. I have a recipe for homemade soft pretzels I’ve been dying to try with a cheese dip, then thought up fun game night dinner options we can play and eat at the same time. My kids are so excited for Wednesday night, and I am too! Something we, as a family, can look forward to. We have been loving our game nights! Trouble, Operation, Memory and Jenga are a few new ones we just added to our collection. Phew! Does Trouble get heated or what! Oh my gosh we have a ball. My kids will remember quarantine when mom let us play games at dinner and ate yummy food while we played on a weeknight! Hey, I workout, a lot. So, bring on the chicken nachos, soft pretzels and who knows what else I’ll come up with. I mean, I’m serving a salad with it, so it’s all about balance, right?

Plan your special night! Movie night with theater foods? Game night with appetizers? Indoor camp out where you tell stories, read books, and make indoor s’mores? Put a tent up if you have one!

There are so many ideas you can come up with. This quarantine is what you make it, and I thank God every day for giving my little family the happiness of being home, every day. We enjoy fun little snacks like these “Skinny Frozen Bites” that are guilt free and something to put a little extra joy in your days ahead.
2 Week Meal Plan
• Friday & Saturday Nights – Take out to support local businesses
• Sunday – Omelets & Fresh Fruit Cups (Brunch)
• Monday – Lasagna, Tossed Salad with Cheesy Garlic Bread
• Tuesday – Grilled Chicken and Roasted Veggies
• Wednesday – GAME NIGHT! Homemade soft Pretzels, Chicken Nachos & Wedge Salad
• Thursday – Stuffed Turkey Peppers
• Friday & Saturday – Take out to support local businesses
• Sunday – Sausage Egg & Cheese Maple Risers (Brunch)
• Monday – Pork Chops, Rice & Steamed Veggies
• Tuesday – Quiche
• Wednesday – Sheet Pan Sesame Chicken & Veggies
• Thursday – Ham & Cheese Spirals

“Skinny Frozen Bites”
• 1 – 8 oz container of Cool Whip
• 7 tbs. of PB2 powder (Peanut Butter Powder)
• 5 tbs. water (for the PB2)
• Chocolate syrup
• Sprinkles

Mix the water and PB2 powder in a bowl until it becomes a peanut butter texture. YOU CAN USE REGULAR PEANUT BUTTER TOO! 4 TBSP of regular peanut butter if you use it, but they will be more than 100 calories a cup then.

Once your peanut butter is mixed, add cool whip and mix with beater until creamy.

Place 4-5 tbsp in each lined cupcake holder.
Then top with a little chocolate syrup and sprinkles. Freeze an hour and enjoy! Any leftovers just place in a freezer bag and snack on when you are ready for a lite delicious treat!
