Well guys, I did it. I fell of the New Year’s Resolution wagon. Remember how I talked about on of resolutions being eating at home more, and spending less money eating out?
Well it has slipped away from me. Life has a way of happening sometimes, and I’ve gotten off course.
So, it’s time for an almost-mid-year reset.
In order to get back on track, I’ve been looking for new recipes. I found this one on tablespoon.com, which is my go-to site for recipes, and it was an AMAZING hit with the family, so I thought y’all might want to try it too! Seriously guys, this went over so incredibly well. So be sure to try it out!
This is also a great dinner idea for when you want something comfy, but don’t want to put a lot of effort in! Chicken, cheese, and of course bacon! You can’t go wrong!
Cheesy Chicken Noodle Casserole
Ingredients:
• 3 oz package real bacon bits
• 1 1/2 cups shredded cheddar cheese
• 1 can (10 oz) cream of chicken soup
• 1 cup sour cream
• 1 cup milk
• 1 teaspoon salt
• 1/4 teaspoon pepper
• 2 cups diced rotisserie chicken or cooked chicken breast (I just cooked some chicken up with salt, pepper, garlic and Italian seasoning)
• 4 cups cooked wide egg noodle pasta (cooked al dente in lightly salted water)
• 2 cups frozen broccoli florets, prepared according to package directions
• 3/4 cup panko breadcrumbs
• 2 tablespoons melted butter
Directions:
Preheat the oven to 350°F and gather the rest of your ingredients.
Combine the bacon, cheese, cream of chicken soup, sour cream, milk, salt and pepper in a large bowl. Carefully stir in the chicken, noodles and broccoli. Pour into a lightly greased 9×13-inch casserole dish.
Combine the breadcrumbs and butter in a small bowl. Evenly sprinkle the breadcrumbs over the casserole. Cover with aluminum foil and bake for 30 minutes. Uncover, increase the temperature to 400°F, and bake another 5-10 minutes or until the breadcrumbs are golden.
Another easy recipe I found was for this Cheeseburger Frittata. It’s kinda like breakfast for dinner — with a twist!
Simple Cheeseburger Frittata
Ingredients:
• 1 lb. lean ground beef
• 1 tablespoon olive oil
• 1 medium white onion, chopped
• 8 large eggs
• 1/4 cup heavy cream
• 1/4 teaspoon garlic powder
• Salt and pepper
• 6 oz. cheddar cheese, grated
• Ketchup, for serving
Directions:
Preheat oven to 350° F. In a 12-inch (oven-safe) cast-iron skillet, add a drizzle of olive oil and ground beef over medium heat. Cook beef, breaking it up as it cooks, until it’s browned.
Once beef is cooked, add onions and cook for a few minutes until they’re soft. Season the mixture with garlic powder and a pinch of salt and pepper.
Meanwhile, whisk together the eggs and cream.
Sprinkle the beef mixture with about 1/2 cup of grated cheese (leave most of it to top the frittata later). Then pour the egg mixture over beef and onions and spread out eggs so they’re even in the dish.
Transfer dish to the oven and bake for 20 minutes at 350° F.
Remove frittata and top with the rest of the grated cheese. Then return to oven for 5 minutes.
