I pretty much live and die by carbohydrates. Pasta, chips, potatoes, rice, you name it and I’m probably going to eat it. Mostly likely with cheese.
But, I’m also an adult, and one that’s — unfortunately — not getting any younger. So every now and again I attempt to make some healthier choices as far as my diet is concerned.
My BF is currently doing the Keto diet. The basic idea of Keto is to get most of your calories from protein and fat. The diet forces the body to burn fats rather than carbohydrates for energy.
It’s been working really well for him. The most amazing part is that his BP has dropped to a normal range for the first time in several years.
Him doing this diet has made it a bit easier for me to make better choices as far as food is concerned because while I still make and enjoy my carbs, I’m eating fewer because he isn’t really eating them at all.
Because I also like to cook, I’ve been on the hunt for good Keto-friendly recipes. Eating steak, chicken or pork and veggies is great, but we all need a little variety in life too.
Plus it’s starting to feel like fall a bit and that makes me crave comfort food. The bad part of comfort food is that it’s usually pretty carb heavy.
So I set out to find something that would fulfill my comfort food craving, but would still be keto-friendly that Steve can enjoy too.
I found this chili. I haven’t tried it yet, it’s on the agenda for the weekend, but it looks really promising, so I figured I would share it will all of y’all.
Keto Chili
Ingredients:
• 2 1/2 lb Ground beef
• 1/2 large Onion (chopped)
• 8 cloves Garlic (minced)
• 2 15-oz can Diced tomatoes (with liquid)
• 1 6-oz can Tomato paste
• 1 4-oz can Green chiles (with liquid)
• 2 tbsp Worcestershire sauce
• 1/4 cup Chili powder
• 2 tbsp Cumin
• 1 tbsp Dried oregano
• 2 tsp Sea salt
• 1 tsp Black pepper
• 1 medium Bay leaf (optional)
Directions:
In a skillet over medium-high heat, cook the chopped onion for 5-7 minutes, until translucent (or increase the time to about 20 minutes if you like them caramelized). Add the garlic and cook for a minute or less, until fragrant.
Add the ground beef. Cook for 8-10 minutes, breaking apart with a spatula, until browned.
Transfer the ground beef mixture into a slow cooker. Add remaining ingredients, except bay leaf, and stir until combined. Place the bay leaf into the middle, if using.
Cook for 6-8 hours on low or 3-4 hours on high. If you used a bay leaf, remove it before serving.
