Cook the Blues Away!


I don’t really do politics in this space, and I have no intention of starting now. Let’s just suffice it to say that there is a lot going on in our country and regardless of party affiliation, there is a lot to be unhappy about.
  So what is the easiest way to escape the unhappiness of the world for a bit? Yep! You guessed it! Food!!
  The only real New Year’s resolution that I made, and one of the first that I have actually stuck to, is trying five new recipes a month. I am a little short for February so far, but there is still a good week to make good on that.
  January brought a couple of really good, healthy and quick recipes. Since working out isn’t really on my agenda, eating healthy is really my only chance for staying in a shape other than round. Quick works for me, because while I don’t mind taking time to cook, there are just some nights where being able to get dinner done fast makes life easier.
  One of those recipes that I found is a Honey-Sriracha Chicken Quinoa Bowl.
  Before I give you the recipe, let’s talk about quinoa for just a minute.
  Quinoa is a protein packed grain that is similar to couscous, but has a richer flavor. It is a great alternative to rice and can be substituted pretty much anywhere you would use rice.
  Quinoa is also a good source of iron, magnesium, vitamin E, potassium, and fiber.
  It’s also gluten-free if that’s your thing.
  It is often referred to as a ‘super-food’ because it’s one of the only plant foods that’s a complete protein, offering all nine essential amino acids in a healthy balance. Not only is the protein complete, but quinoa grains have an usually high ratio of protein to carbohydrate, since the germ makes up about 60% of the grain. (For comparison, wheat germ comprises less than 3% of a wheat kernel.) It is also low on the glycemic index so it makes it a healthy carb for those with blood sugar issues.
  Pair quinoa with a lean protein and a veggie and you pretty much have the perfect meal! So here is my easy-peasy-healthy dinner! You can add a side of your favorite veggie to make it complete!
Honey-Sriracha Chicken Quinoa Bowl
• 2 tablespoons coconut oil
• 4 chicken breasts
• 1 cup honey
• 2/3 cup Sriracha
• 3 cups cooked quinoa, warmed
• Freshly chopped scallion, for garnish
• Freshly chopped cilantro, for garnish
  In a large nonstick skillet, melt coconut oil over high heat. Toss in chicken cubes, cooking until golden brown on the edges and cooked through. Set aside.
  In skillet, bring honey to a boil over medium-high heat. Add sriracha and cooked chicken. Cook over medium heat, stirring constantly, until the glaze begins to thicken, about 7-12 minutes. Serve over warmed quinoa, topped with chopped scallions and cilantro.
